Sweet sour chicken



*Ingredients:

°1 pound boneless, skinless chicken thighs or breasts, cut into 14 pieces
°1 egg white
°1/2 teaspoon kosher salt (1/4 teaspoon table salt)
°2 teaspoons cornstarch
°1 (10 ounces) can pineapple chunks (reserve juice)
°¼ cup canned pineapple juice
°1/4 cup white vinegar
°1/4 cup ketchup
°1/2 teaspoon kosher salt (1/4 teaspoon table salt)
°2-3 tablespoons brown sugar
°1 tablespoon + 1 teaspoon cooking oil
°1 red pepper cut into 1-inch pieces
°1 yellow bell pepper, cut into 1-inch pieces
°1 teaspoon grated fresh ginger

*Methods:

Coat chicken with egg whites, salt and cornstarch: In a bowl, mix chicken with egg whites, salt, and cornstarch. My heart to coat the chicken evenly. Leave it for 15 minutes at room temperature or overnight in the refrigerator.
Make a sweet sour sauce: Whisk the pineapple juice, vinegar, ketchup, salt, and brown sugar together.


Fried chicken: Heat a large frying pan or skillet over high heat until a piece of water immediately explodes and evaporates. Pour 1 tablespoon of cooking oil and roll to coat.
It is important that the pan is very hot, add the chicken and spread the chicken in a single layer. Let the chicken fry untouched for a minute, until the bottom turns brown.
Flip the other side and fry for one minute. The chicken should remain pink in the middle. Place the chicken on a clean plate, leaving as much oil as possible in the skillet.


Stir in paprika and ginger: Set the heat to medium heat and add the remaining teaspoon of cooking oil. Let the oil heat up, then add the sweet pepper pieces and ginger. Fry for 1 minute.
Add pineapple, sweet-sour sauce, simmer, add chicken: add pineapple pieces, sweet and sour sauce. Bring to a boil over high heat and when the sauce boils, add the chicken pieces again.


Let simmer for 1-2 minutes, until chicken is cooked through. Timing depends on how thick the chicken pieces are. The best way to tell if the chicken is done is to take out a piece of it and chop it up. If it's pink, add another minute to cooking. Taste the sauce and add more brown sugar if you like. Enjoy!
